Instructions

  1. In a food processor, blend the oats and baking powder into a fine powder.

  2. Add the cottage cheese and egg whites and blend until the batter is smooth. Make sure to not over-blend.

  3. Preheat a medium to large nonstick pan to medium heat. Grease it with a neutral oil such as coconut, avocado oil or butter.

  4. Pour half of the batter to the greased pan to form a round pancake.

  5. Cook the pancake for about 30-60 seconds when bubbles form in the surface (or until golden brown), then flip and cook on the other side until golden brown.

  6. Repeat the process for the other half of the batter or refrigerate the leftover batter for later use.

  7. Serve immediately with your toppings of choice.

Notes

1. Use a 2-5% cottage cheese.

2. Use gluten free oats if needed.

3. If you don't have packed liquid egg whites from a carton, use fresh. In that case, you might need to add 1 tbsp of milk.
