Wash blueberries and add to a medium size saucepan.
Add water, maple syrup and simmer on low-medium heat for 5 mins. Smash a few blueberries with a fork.
Make a cornstarch slurry by combining 1 tsp of cornstarch with 1-2 tsp water. Add to the blueberries and simmer for 1 minute until the sauce thickens. (You might need to add slightly more or less depending on your desired sauce consistency)
Take off the heat and add lemon or orange zest, if using.
Let it cool completely and transfer to glass container and store in the fridge for up to 1 week
