Instructions

  1. In a large pot, steam your broccoli for 5-7 minutes and set aside. I had leftover steamed broccoli which I used for the soup. You can skip this step and just add the chopped broccoli raw as directed in step 7 below.

  2. In a large pot, melt your butter and add the onion and leeks.

  3. Saute the veggies for around 3 minutes on medium heat until softened.

  4. Add the flour and whisk for about 1 minute until the flour is incorporated.

  5. Add the stock gradually, whisking the pot continuously until smooth.

  6. Repeat the same process with the milk and cook for 1-2 minutes to ensure no flour lumps are formed.

  7. Add your steamed broccoli (or raw) and simmer for around 5-10 minutes. If your broccoli is raw, then simmer for about 15 mins or until the broccoli is tender and cooked through.

  8. Take the pot of the heat and set aside for 5 minutes.

  9. Shred your cheddar and add to the pot (off the heat) gradually in one handful at a time in 3 doses. Make sure the cheese fully melts before adding more.

  10. Season with salt and pepper to taste and enjoy!

  11. Optional: Serve with more shredded cheese and freshly cracked black pepper.

Notes

1. Let the soup cool down and store in an air tight container in the fridge for 2-3 days or freeze up to 3 months.
