Preheat the oven to 180°C (350°F).
Season the boneless skinless chicken thighs and breast with your spice mix of choice.
If using, thinly slice the onion and add to the seasoned chicken. If your spice mix does not contain salt and pepper, season with salt and pepper.
Drizzle with olive oil and mix until well combined.
Place in a roasting pan and bake for 25-35 minutes. Baking time will depending on the size of the chicken thighs and breast.2
Notes
1. The spice mix I used for chicken includes salt, pepper and spices such as: garlic powder, onion powder, paprika, chili, curry powder, nutmeg, thyme, fennel seeds, cumin, mustard seeds, cardamon, chives and bay leaf.
2. Internal temperature of the thickest part of the chicken must be cooked to 74 ℃ (165℉).
