Prepare the veggies. Thinly slice the onion1 (if using). Slice the tomatoes in half (if using cherry) or in small wedges (if using classic tomatoes). Peel the cucumber fully or partially in a striped pattern and slice in half circle slices (1 cm thick). Core and slice the green pepper into half circle rings.
In a small serving bowl, combine tomatoes, onion (optional), cucumber, pepper and olives.
Add the feta cheese in small cubes or crumbled and sprinkle with oregano.
Drizzle with the olive oil and (if using) the red wine vinegar, stir well to combine and enjoy!
Notes
1. If using the onion (optional), thinly slice in half circles and place it in a bowl of cold/ice water and let it soak for 5-10 minutes while you chop the other veggies. This help to reduce some of the heat of the onion. Alternatively, you could prickled red onions.
2. Traditional Horiatiki salad can be made with or without vinegar, it is up to your preference!
